Title: Cheesy Campfire Potato Packets
Yield: 2 servings
Ingredients:
2.5 lb potatoes
1 medium onion
5 bacon strips
1/4 cup butter (1/2 stick)
1/2 tsp salt
1/4 tsp pepper
Shredded cheese
Sour cream
Steps:
1. Prepare campfire for medium heat. Peel the potatoes and cut them into 1/4 inch slices. Finely chop the onion. Cook and crumble the bacon.
2. PAM spray a large rectangle of heavy duty foil about 36 inches long.
3. Onto the foil, put everything but the cheese and sour cream. Fold foil around the components and shake around a little bit to distribute ingredients. Be sure the seal is tight.
4. Cook on campfire until potatoes are tender, about 15 minutes per side. Open foil carefully, watching for steam. Put cheese on potatoes. Cook longer if desired (I suggest we skip this so no ash gets in our potatoes). Serve with sour cream.
